Banana Coconut Flour Muffins

Banana Muffins are delicious - full of flavour, moist a quintessential favourite for kids. That's why we were immediately intrigued when we saw this recipe for banana muffins using coconut flour, which adds texture, lots of fiber and tropical flavour.


  • 1 cup coconut flour
  • 6 eggs
  • 2 ripe bananas
  • 2 tbsp butter
  • 2 tbsp coconut oil
  • 2 tbsp milk
  • 3 tbsp honey
  • 1 tsp aluminum-free baking powder
  • 1/2 tsp vanilla
  • 1/8 tsp pink himalayan salt


  1. Heat oven to 375 degrees Fahrenheit
  2. Mash bananas and melt butter
  3. Slowly beat eggs, then add milk, honey, coconut oil, butter, vanilla and salt while mixing
  4. In a separate bowl, mix coconut flour and baking powder
  5. Add flour mixture and mashed bananas to the egg bowl and blend well
  6. Grease muffin pan with coconut oil and fill with mixture. Recipe should fill a pan of 12 cups
  7. Bake at 350 for 12 minutes


Optional: Banana chips can be added to the top of the muffins before putting them in the oven for extra flavour!
